French Toast Fingers from Ferme Avicole Laviolette Ltée    

This French toast recipe is ideal for snacks, lunch or brunch.

4 eggs    
2 tbsp. (30 ml) freshly squeezed orange juice
½ tsp. (2 ml) grated orange rind
¼ tsp. (1 ml) salt
½ cup (125 ml) strawberry jam
4 slices fresh white sandwich bread
4 thick fresh slices whole wheat bread
Vegetable oil spray
Icing sugar (optional)
Maple syrup (optional)

Beat in small bowl, eggs, orange juice, orange rind and salt. Set aside. Spread 2 tbsp. (30 ml) jam on each slice of bread; place whole-wheat slices on top; remove crusts; cut each sandwich into three equal parts. Dip both sides into the egg mixture until they are completely soaked. Spray a griddle or a large non-stick pan with vegetable oil and heat over medium heat. Cook for two minutes, turning sandwich fingers until golden brown; sprinkle with icing sugar, if desired. Serve with a small dipping bowl of maple syrup.
