Celery Root Rémoulade with Shrimp from JKG Farms

Serves 4

1 large Celery Root
1/2 cup mayonnaise
2 tbsp Dijon mustard
1 tbsp chopped fresh parsley
20 large shrimp, cooked, peeled, deveined and cut in three
salt and pepper
juice of 1 lemon
few drops of hot pepper sauce

Peel celery root and cut into fine julienne.  Place in large bowl.  Mix remaining ingredients, except shrimp, in a separate bowl.  Season to taste and add to celery root.  Mix well.  Add shrimp, mix and correct seasoning.
