Maple Chai Tea from Fulton's Pancake Houses Sugar Bush

2 ½ cups (625 ml) milk
1 cup (250 ml) water
2 tbsp. (30 ml) maple syrup
½ tsp. (2.5 ml) ground ginger
1 small cinnamon stick
4 whole cloves
1 tsp. (5 ml) cardamom spice
4 whole allspice
pinch ground nutmeg
2 tea bags (decaffinated for kids)

Bring everything except tea bags to a boil. Reduce heat and gently simmer 15 minutes. Add tea bags and simmer 4-5 minutes. Strain spices out. Store in a closed container in fridge. Pour into a mug and heat.
