Wild Blueberry Yogurt Clafoutis from Granite Town Farms Ltd.

Makes 48 portions

Ingredients:
11¼ cups Wild Blueberries, fresh or frozen
1½ cups all-purpose, pre-sifted flour
6 tbsp. Sugar
6 cups vanilla yogurt
12 large eggs
4½ cups all purpose, pre-sifted flour
3 cups brown sugar
1 tbsp. Nutmeg
1½ cups butter or margarine

Preparation:
Pour Wild Blueberries into lightly greased pan.  Combine 1 ½ cups flour, sugar, vanilla yogurt and eggs in a bowl.  Beat well for about 2 minutes.  Pour mixture over berries.  In the same bowl combine 4 ½ cups of flour brown sugar, nutmeg and butter or margarine and blend together until crumbly.  Sprinkle over yogurt mixture.  Bake at 350 degrees until golden brown and puffy, about 30 minutes.  Serve warm.  Refrigerate any leftovers.
